In a processor, add apricot, coconut, cashew nut, hemp seeds, salt, maple syrup, vanilla extract, and blend coarsely. Transfer them to a bowl and shape them into small balls.
Cacao Bites
In a processor, add dates, walnut, almonds, pumpkin seeds, cacao powder, chocolate extract, and blend coarsely. Transfer them to a bowl and shape them into small balls.
Pitaya Bites
On a double boiler melt cacao butter and coconut oil. Once melted keep aside.
In a processor, add rolled oats, chia seeds, acai powder, protein powder, pitaya powder, and blend coarsely.
Combine cacao butter and the nut mixture well and shape them into balls.
Notes
If you don’t have cacao butter then use dates or apricots to blend them.
I like roasting oats, nuts, and seeds before blending them.
