Preheat the oven to 350°F. Line up the cookie tray with a silcone mat or parchement paper.
In a bowl combine amaranth flour, almond meal, garlic powder, baking powder, chia seeds, chopped parsley. Mix well.
Gradually add oil and water and knead to form a smooth dough.
Flatten the dough with the rolling pin to 3 inch thickness. Keep the dough in between the pachament papers so that it doesn't stick. Prick hole using fork.
Use a cookie cutter to shape the crackers and bake for 12 minutes or bake until lightly browned.
