Steps for preparing vegan mashed potatoes

  1. Peel the potatoes. Chop them into bigger chunks and soak them into plenty of water.
  2. Soak the potatoes in water for 30-45 minutes. Wash well and keep changing the water.
  3. Cook the potatoes until soft and mash them.
  4. In a saucepan, add coconut milk, coconut oil, crushed red peppers, pepper, and salt.
  5. Pour in the mashed potatoes and combine well.
  6. Use the immersion blender for smooth and creamy consistency.
  7. Top with more red chilly flakes, pepper, and green onions and serve.

Milk: Use any nut milk.

Ingredients
  

  • 3 potatoes peeled
  • 1/2 cup coconut milk
  • 2 tbsp coconut oil
  • 1 tsp crushed red peppers
  • perpper and salt to taste

To garnish

  • crushed red peppers
  • pepper
  • green onions

Instructions
 

  • Peel the potatoes and chop them into cubes. Always keep the potatoes immersed in water.
  • Rinse them twice and soak them in water for 30 minutes or more.
  • Again rinse them and transfer to the boiling water.
  • Allow them to cook till soft. Drain them.
  • Once drained well mash them with a masher or fork.
  • In a sauce pan, warm coconut milk, coconut oil, crushed red peppers, pepper, and salt to taste and stir them well.
  • Once the oil melts, transfer to the mashed potato and stir them well.
  • Use a fork to beat them well or use immersion blender to get a creamy potatoes.
  • Transfer to the serving bowl and garnish with crushed red peppers, pepper, and green onions.

  • Rinse the potato well by changing the water.
  • For a creamier version, add coconut cream.
