Tofu & pepper curry is the combination of tofu and red peppers that goes well with rice and flatbreads. Tofu is fried in the pan and simmered with peppers in tomato sauce to make the curry protein-rich.

Tofu: Tofu is rich in calcium and vitamin D. It provides a good source of protein.
Red peppers: contain more than 200 percent of your daily vitamin C intake and are a great source of vitamin B6 and folate.

Steps for preparing tofu & pepper curry
- Heat half of the oil in a cast iron pan over medium heat and cook tofu for 5-6 minutes, flipping, until golden brown on all sides. Remove and set aside.
- Heat the remaining oil in a saucepan, add cumin seeds, chilies, ginger, turmeric, and garam masala if using.
- Stir well. Add the peppers and cook for 5 minutes covered.
- Add the tomatoes and cook for 5-7 minutes. Add the tofu, season with salt and pepper then simmer for 10 minutes.
- Add water if necessary. Serve with flatbreads or rice.
Variations
Canned tomatoes: use 5 fresh tomatoes in place of 1 canned tomato.
Garam masala: It is a mixture of blended Indian ground spices. It brings flavor to the curry. If you don’t have it, skip it.

What are the different ways I can cook tofu for this recipe?
Tofu can be cooked in hot water for 2 minutes. Immediately remove from the water and drain the water completely. You can add the cooked tofu to the gravy.
The pan fry method allows you to absorb all other flavors added to tofu and still absorb spinach gravy. Check the guide to tofu for more options.
Can I bake tofu?
Yes, you can bake the tofu once you mix all the spices like cayenne powder, salt, nutritional yeast, and a tsp of oil and toss well. Bake in the oven for 20-25 minutes at 350° Fahrenheit.
What can I use for canned diced tomatoes?
You can use fresh tomatoes. Boil water in a pan add tomatoes and cook until the skin comes out. Switch it off and allow it to cool. Remove the skin and chop the tomatoes and use.
What is garam masala?
Garam masala is a blend of ground spices mostly used in Indian cuisines. It brings flavor to the curry. It is completely optional to add the garam masala.
Meal prep/ How to store
Before adding the tofu, the curry can be frozen. Once the tofu is frozen it loses its texture. To use, defrost the curry and add the tofu. After adding the tofu it can be refrigerated and used within 2 days.
