Spicy breakfast fajitas are simple and easy to prepare in the morning with vegetables and can be done ahead. It can be done in 15 minutes, which is perfect on busy mornings too. A perfect, healthy Mexican breakfast. They are prepared with simple ingredients available in the market. I used only vegetables, if you want to add protein go ahead and add some canned beans for a quick version.
Traditionally, they are prepared with cast iron. I used only onions and color peppers. You can use a variety of toppings like guacamole, hot sauce, sour cream (vegan) to make it more flavorful and filling fuel for the day.

Steps for preparing Spicy breakfast fajitas
- In an iron skillet, heat olive oil over medium heat. Add the garlic, onions, bell peppers, cumin, chili powder, red chili flakes, and salt.
- Toss to combine and fry until crunchy. Add lemon juice.
- In a skillet over medium heat, warm each tortilla on both sides. Stack in a kitchen towel to keep it warm.

Prepare the vegetables ahead and store them in an airtight container and refrigerate it. While ready for breakfast warm the tortillas in the pan and vegetables in the microwave.
