Roasted tomato dip is prepared with cherry tomatoes and Greek yogurt. Cherry tomatoes brushed with olive oil roasted in the oven and combined with yogurt give a nice tangy and creamy dip.
This dip can be served with fries or vegetable fries. It can be used as a spread for burgers. Use however you want to eat or serve. For a bright red color use red chili flakes or powder.

Steps for preparing Roasted tomato dip
Rinse and dry the cherry tomatoes. In an oven-proof pan add the tomatoes and olive oil.
Preheat the oven to 375° F. Bake them for 15 minutes.
Once roasted, allow them to cool.
Add the cherry tomatoes, apple cider vinegar, greek yogurt, pepper, and salt to the processor. Process until smooth.

Is it necessary to use vinegar?
Yes, you can use regular vinegar or white wine vinegar instead of apple cider vinegar.
What type of spice can I use in the dip?
Regularly, groud pepper is used. Otherwise, you can use cayenne powder, and roasted red pepper flakes. It gives a nice bright red color.
What are the other options for Greek yogurt?
For a thick yogurt, you can filter 1.5 cups of yogurts in a sieve (cloth on top) and leave it in the refrigerator overnight. This will yield thick yogurt. You can use non-flavored yogurt.
