Rice flour pancakes are gluten-free pancakes. They are gluten-free as well as vegan. The bananas with rice flour make soft waffles. You will not have a crispy waffle compared to regular flour. Even if the waffles cool down, the rice flour in the waffle will not make it hard or chewy; it will be soft. I have not used much oil for this waffle recipe.

Steps for preparing rice flour waffles
- Add the rice flour, sugar, bananas, coconut oil, coconut flakes, and vanilla extract to the blender. Puree it.
- Preheat the waffle maker. Spray or brush some oil.
- Spread the batter in the preheated waffle maker and cook until golden brown.
Variations
Flour: I have used rice flour here. You can use brown rice flour. However, I have not tried other gluten-free flours.
Sugar: You can use brown sugar, white sugar, 1/4 cup of maple syrup, or agave nectar.
Coconut slices: To add a crunch, I have used coconut slices; you can use any chopped nuts.

Will the rice flour pancakes be crispy?
No, the pancakes will not be crispy. However, since we are adding bananas, you get soft pancakes.
Can I add brown rice flour for the waffles?
You can use brown rice flour to prepare these vegan, gluten-free waffles.
My batter is too thick; should I add water?
This batter is thick. If you want to make it thin, add water, oil, or any nut milk. Make sure you start with a tbsp of liquid at a time.
Why do we add coconut pieces to the waffles?
To get a crunchy bite in the waffles. You can add chopped or sliced almonds or any nuts.
Why are we using a blender to mix the batter?
It is easy to mix without lumps. If you mash the bananas finely, add the rice flour and whisk it in the hand blender.
Waffle toppings
Fruits: You can always add fresh fruits on top, like apples or berries.
Nuts & seeds: Add the seeds and chopped nuts on top.
Syrup: Agave nectar or maple syrup.
Cream: Use whipping cream or yogurt on top. You can use nut butter too.
Meal prep/ How to store
I have not tried freezing rice flour waffles. If freezing, keep the parchment paper between each waffle and store them in a freezer-safe bag or container. Then, please bring them to room temperature to defrost and microwave them for a minute. You can microwave straight from the freezer for three minutes.
