This is the perfect recipe for the crowd. Keep salad, sauce, and pita separately. When ready to enjoy the food, warm the pita bread and allow the guest to make a choice of what goes in the bowl.

Herbed tahini sauce can be stored for up to a month in the fridge. You can chop the vegetables for the salad and store them separately. It is always a good idea to mix the salad when ready to eat. The lemon and salt make the salad watery. If you like mix all the vegetables and store them in a bowl. Season while you are serving.

Ingredients
- 2 whole wheat pita bread
- Herbed tahini sauce as per need
- 1 tsp olive oil for brushing
Chickpeas salad
- 1.5 cups chickpeas boiled and drained or canned
- 3/4 cup diced cucumber
- 1 tomato chopped
- 1 tbsp green onions chopped
- 2 tbsp parsley chopped
- 1 tsp minced garlic
- 2 tbsp green olives or olive salad
- 1 tsp lemon juice
- salt to taste
Instructions
Chickpeas salad
- In a bowl add chickpeas, cucumber, tomato, green onions, parsley, minced garlic, green olives, lemon juice, and salt. Combine well.
- Cover the salad and refrigerate it until use.
Warming pita
- Preheat the oven to 350°F.
- Slice the pita bread into 8 wedges and arrange them in a baking tray.
- Put in the oven until the pitas are warm. Make sure you do not overbake it.
To assemble pita bread bowl
- This should be done before serving.
- In a bowl, arrange the pita bread, chickpeas salad and top them with herbed tahini sauce
Notes
- If using dried beans, soak them overnight and pressure cook them for 15 minutes, and drain them.
- If using canned beans drain the water.
- Do not throw away the water you can use it for preparing hummus.
- For a different variation, use falafel bites in the bowl.
