German Apple Pancake is a pancake with apple-cinnamon topping and tastes like Apple pie. A quick recipe for the busy mornings. This German Apple Pancake recipe was slightly adapted from the Costco Way book. Rather than doing individual pancakes, the whole batter is poured into a pan to be baked or microwaved.
German Apple pancake can be done very quickly using a pancake mix, or you can complicate it like me by preparing it from scratch. I tried the Vegan version and non-vegan too. Honestly, I liked Vegan pancakes.

Whole wheat flour According to Colorado state university, the fiber in it prevents constipation, lowers blood cholesterol, and might help you lose weight.
Apple health benefits of apples include prevention of cardiac and GI disorders, constipation, anemia, and diabetes.
Coconut milk(vegan) is antibacterial, antifungal, and antiviral. This acts as a skin cleanser and anti-aging.
Variations
I have already done two versions of German Apple pancakes. The possible variations are
Whole wheat flour – you can use all-purpose flour, spelt flour, or amaranth flour.
Milk – Use nut milk in place of regular milk. For the vegan version, use plant-based milk for coconut milk.
Can I microwave it?
Absolutely, this recipe calls for a microwave method. For the microwave method.
- Melt butter in a microwave for one minute.
- Stir in sugar and cinnamon. Arrange Apples, cover, and microwave for 3-4 minutes.
- Pour batter over the Apple and microwave uncovered for 5 minutes or until the toothpick inserted comes out clean.
Should we use Pancake mix?
Yes, for a quick version, use pancake mix. Prepare the batter as per the instruction. However, if using buttermilk complete pancake mix, for 1 cup of mix add 3/4 cup of water and flavor with vanilla extract and ground cinnamon.
Why to prepare Pancake mix?
I want to choose my flour, so I want to go from scratch. Preparing pancake mix is so quick, as easy as using the pancake mix. For egg-free pancake mix, I always follow this recipe.
- Whole wheat flour or APF – 1 cup
- Sugar – 1 tbsp
- Baking powder – 1 tbsp
- Oil – 1 tbsp
- Milk – 1 cup
- Vanilla extract
Mix the dry ingredients to store in bulk, and when preparing the pancake add milk and oil.
Can I add sugar in the batter?
You can add sugar from 1 tablespoon to 1/4 cup for a cup of flour used. I didn’t use sugar in this pancake since we are adding sugar to the apple. But I would suggest adding 1 tbsp of sugar.
Vegan Vs Vegetarian
I tried both vegan and with milk on the same day. I liked the vegan version with the dark brown color in the Apple topping. The coconut sugar with coconut oil turned out so good. I have not used egg in the vegetarian version, though it turned out soft. I have given separate recipe cards for the vegan and non-vegan versions.

Ingredients
Apple topping
- 1 Apple sliced
- 1/4 cup brown sugar
- 1/4 cup butter
- 1/4 tsp ground cinnamon
For Pancake mix
- 1 cup Whole wheat flour
- 1 cup milk
- 1 tbsp baking powder
- 1 tbsp oil or butter
- 1/4 tsp vanilla extract
- 1/8 tsp ground cinnamon
Instructions
- Place the melted butter in a pan, and arrange the thin apple wedges, overlapping tightly.
- Top with brown sugar and ground cinnamon.
- spread evenly and keep in a preheated oven (350 deg F) for 5 minutes.
- In a medium bowl, add whole wheat flour, baking powder, ground cinnamon, oil, vanilla extract, and milk.
- beat the mixture until smooth. If necessary, add more milk. Spread batter over apple wedges in brown sugar mixture.
- Tap it to spread evenly and bake it for 10 minutes or until a tootthpick inserted in center comes out clean.
- Once cooled, run knife around sides of pan to loosen cake. Place heatproof serving plate upside down over pan.

- 1 tbsp. coconut oil
- 1 tbsp. coconut sugar
- ground cinnamon a pinch
For pancake
- 1/4 cup whole wheat flour
- 1/4 cup coconut milk
- 1/4 tbsp baking powder
- 1/4 tbsp coconut oil
- 1/8 tsp vanilla extract
- ground cinnamon a pinch
Instructions
- Place the coconut oil in a pan, and arrange the thin apple wedges, overlapping tightly.
- Top with coconut sugar and ground cinnamon.
- Spread evenly and keep in a preheated oven (350 deg F) for 5 minutes.
- In a medium bowl, add whole wheat flour, baking powder, ground cinnamon, oil, vanilla extract, and coconut milk.
- Beat the mixture until smooth. If necessary, add more coconut milk. Spread batter over apple wedges in coconut sugar mixture.
- Tap it to spread evenly and bake it for 5 minutes or until the toothpick inserted in the center comes out clean.
- Once cooled, run a knife around the sides of a pan to loosen the cake. Place a heatproof serving plate upside down over the pan.
