Coconut milk: It is antibacterial, antifungal, and antiviral. It acts as a skin cleanser and anti-aging.
Agave nectar: It is very low in the glycemic index which is good for blood sugar levels.
Variations:
- Sweetener – Agave nectar, Maple syrup, Coconut sugar.
- Fruit – You can combine any fruit with pudding itself or make it plain with vanilla extract and top with some chopped fruits and nuts.
- Milk – Any diary or nut milk can be used.

Mango Chia Pudding
Ingredients
- 3 tbsp Chia seeds
- 1 cup Ripe mango chopped
- 1 cup Coconut milk Any milk
- 3/4 tbsp Agave nectar
Toppings of choice
- Coconut flakes, Chopped mangoes, Granola, etc
Instructions
- Peel the mango and chop into cubes.
- Puree the mango, Coconut milk, agave nectar in a blender.
- In a mason jar or any bowl add chia seeds and the puree. Stir well or shake the mixture if using mason jar.
- Let it sit for 15 minutes and transfer to your refigerator to sit for 3 hours or overnight.
Notes
- Any milk can be used instead of coconut milk.
- Coconut milk yields creamy and thick pudding, whereas the other milk will be on a lighter side.
- The sweetener can be replaced with coconut sugar, stevia, maple syrup, or yacon syrup.
- Depending on mango taste sweet or sour, decrease or increase the sweetener.
