- On medium flame, dry roast the spices like coriander seeds, cumin seeds, and pepper. Allow it to cool.
- On a heated pan, on high heat, add the sesame seeds and keep it stirring. Sesame seeds will start popping.
- Add walnuts. When it is warm, switch it off.
- Grind the spice to a fine powder in the blender.
- Transfer to the food processor, and add the sesame seeds, walnut, and salt.
- Process it coarsely. Store it in an airtight container.

- Walnuts: You can use peanuts🥜, pistachios, or hazelnut.
- Seeds: use black sesame or white sesame seeds
- Hot spices: pepper, chili, or cayenne powder
- Herbs: use fennel seeds for more flavor.

What are the nuts I can use for dukkah spice?
You can use it on one nut or a combination of nuts like groundnuts, pecans, and pistachio.
Can I use cayenne peppers in place of pepper?
You can use ground cayenne peppers, red chili powder, or ground pepper.
I don’t have whole spices. Can I use ground spices?
Absolutely yes. The whole spices bring more flavor to the spice blend.
Why should I dry roast the spices and nuts?
Roasting the spice brings more flavor. I highly recommend roasting all the ingredients before grinding.
Can I use the food processor to prepare the dukkah spice?
Yes, if you like the spice mix to be coarse. I like the texture of the nuts to be coarse but the spices to be grounded. So for the spices, I used a coffee grinder and food processor for the nuts.
Serving suggestions
I have not included the spice in the following recipes. It’s a suggestion. I have tried stir-fried beans, which tasted great.
- On toast, mix some olive oil, add avocadoes, and make a toast for breakfast. Use it in a sprouts sandwich or on a tofu scramble.
- On vegetables, You can add any stir-fried vegetables like stir-fried beans.

Prepare the dukkah spice as per the directions. It can be stored in an airtight container. It can be kept at room temperature for two weeks and refrigerated for 3 months.

Ingredients
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 1 tsp pepper
- 1/4 cup sesame seeds
- 1/2 cup walnuts
- salt to taste
Instructions
- Dry roast coriander seeds, cumin, and pepper on medium heat for a minute or until fragrant. Keep aside
- Roast sesame seeds in a heated pan. It pops all over. Cover it with the lid. Add walnuts and roast till it's warm.
- Allow it to cool.
- In a coffee grinder or mortar and pestle grind the coriander, cumin, and pepper to a fine powder.
- Then transfer the powder to the blender add sesame seeds, walnuts and pulse until coarse.
- Transfer to the airtight container and store it.
