Cranberry Fried Rice is delicious with its vibrant colors, the rice fried on high heat with the tart of cranberry makes a perfect blend. I have added peas to look more colorful. Fried rice is so simple and easy to make. If you have leftover rice lying on your refrigerator then this is a quick dinner/lunch you can make.
Cranberries have so many health benefits. If you like to try cranberry with spice then you should make it. After getting cranberries for this season I tried different recipes.

Cranberry They are superfoods due to their high nutrient and antioxidant content. Cranberries are a rich source of several vitamins and minerals, especially vitamin C.
Variations
Rice Use brown rice or any short-grain rice. Alternatively, you can use quinoa.
Peas Carrots, beans, or any vegetable of your choice can be added or avoided.
Green chili Use grounded black pepper or jalapeno.
Can I use whole cranberries?
You can use the whole cranberries too, but make sure it bursts out while frying. On the other hand, do not grind the cranberries to a fine paste. It will not taste good. The coarse cranberries give a nice taste.
Can I use frozen cranberries?
Yes. If you are baking you no need to thaw the berries. For this recipe, place the frozen cranberries in a paper towel and microwave for 30-45 seconds. Then transfer to the processor and pulse them until you get a coarse paste.
Tips for cooking fried rice
- Freshly cooked rice or leftover rice – Both works well. While using freshly cooking rice, make sure it is cooled down completely before frying. Also, use less water and cook only 3/4th of it. So that rice doesn’t break while frying. Leftover rice works perfectly fine.
- Frying vegetables – Always fry on high heat and fry one by one. Do not dump all vegetables together.
- Frying rice – When making fried rice, always use high heat and keep stirring. That brings the taste and aroma of the rice.

Cranberry Fried Rice
Ingredients
- 1 cup fresh cranberries
- 1 cup cooked long grain rice
- 2 tbsp oil
- 2 cloves garlic chopped
- 1 tbsp ginger chopped, optional
- 3 green chily slited or jalapeno
- 1 onion sliced
- 1/4 cup frozen peas
Instructions
- Rinse the cranberries and use a food processor or blender to grind to a coarse paste. Keep aside.
- On a heated pan, add oil, garlic, ginger, and green chilly and saute for 30 seconds.
- Then add onions and cook until they are transcluent. Add the frozen peas and cook for a minute.
- Add the coarse paste of cranberries and fry for 5 minutes or until dry. Then add the cooked rice and turn the heat to high.
- Mix the rice and cranberries well and cook on a high heat for 5 minutes. Serve hot with orange tofu or any side.
