- 15 chipotle chilies

- 3 cloves garlic
- 1 tsp sugar
- 1 tbsp lemon juice

- 2 tbsp olive oil
- 1 tsp balsamic vinegar

- 1 tbsp chipotle paste
- 1/4 cup sour cream
- 1 tsp lemon juice
- salt to taste
Instructions
- Dry roast the chilies, removing the stalks without burning.
- Soak them in hot water for 10 minutes.
- In a blender or processor, add soaked chilies by draining, garlic, salt, lemon juice, and sugar and grind them with water to a fine paste.
- On the heated pan, add oil and the chili ground paste and cook till all the water are removed. Cover and cook to avoid splutter.
- Switch off the flame and transfer to the sterlized jar and add balsamic vinegar – mix.
