Carrot Oatmeal Pancake is the perfect breakfast to prepare on busy mornings. The vibrant color of the carrots in spring, (though available in all seasons) makes it special to start the season. Mostly the carrot cakes are baked every spring for Easter. This pancake is similar to the cake, like a dessert with a soft texture. Preparing with oatmeal makes it more healthy. Believe me or not, it tasted so perfect, like regular flour. The dough was sticky, but once cooked, it was not oaty.
I have added vanilla extract for flavoring add some spices, which goes well with carrot, and the pancake will be spiced just like a classic one.

Yes, absolutely you can. The blender helps the carrot to make a little more fine ad blends well with flour to give a gorgeous color. If you are not blending the color will be a little lighter.

Yes, you can any flour you like. Each flour acts differently. The texture, density, and liquid ratio vary. Whole wheat flour gives denser pancakes than oatmeal. All-purpose flour will be exactly like oatmeal.
What if, I don’t have oat flour?
Dry roast the oatmeal for a few seconds or until they are warm. Do not roast it dark. While roasting the color should not change. Then grind to a fine powder first. Once you have the flour then, mix all the ingredients and follow the same steps.

Quick oats or old-fashioned rolled oats can be used. Do not use steel-cut oats.

Ingredients
- 1 cup oatflour
- 1 cup grated carrot

- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 tbsp oil
- 1 tbsp agave nectar or maple syrup or sugar

Instructions
