Caramelized peanut fudge can be prepared in no time with no butter and with only 2 ingredients peanuts and sugar. The color and flavor of caramel will enhance the taste of the peanut. Above all, this protein snack has no butter or oil to make it healthier.
I roasted the peanuts to get more color. Moreover, coconut sugar added a darkish color.
Consistency of the fudge:
Moreover getting the right consistency is the key to making fudge. For instance, if the dough is dry, try adding a tbsp of water at a time. If it’s runny, add a tbsp of peanut powder.
When the dough comes together without sticking, that is the right consistency we need to achieve.

Caramelized peanut fudge
Ingredients
- 1 cup roasted peanuts unsalted
- 3/4 cup coconut sugar
Instructions
- Place the roasted peanuts in a food processor and grind coasely.
- Melt the sugar in pan on a medium heat.
- Once sugar starts to melt add the peanut powder.
- Keep stirring, at one point it will all come together.
- Depending on the moisture, you may need to add water – 1 tbsp of water at a time. At one stage it will form a thick dough consistency.
- Switch off the flame. Transfer the dough on a parchment paper. Once warm, press the dough into a square 1-inch thickness. Cut into squares.
Notes
- You can keep the ratio of peanuts and sugar equal.
- Do not grind peanuts long, it may turn into butter.
If using normal sugar, there is no need of adding water. Make sure you always one tbsp of water at a time to get the right consistency. I ended up adding 3 tbsp of water.
