Amaranth almond crackers are simple savory crackers with amaranth flour and almond meal. They are gluten-free and a healthy alternative to regular flour. Adding chia seeds with garlic and herbs gives a huge burst of flavor.
I should say this as salt crackers rather than savory crackers. No spice has been added. I used a tiny cookie-cutter which was a pain. Use big cookie cutters to make your work quicker. This recipe is slightly adapted from here.

Chia seeds: Provides numerous amount of benefits like rich in fiber, protein, calcium, magnesium, and potassium.
Amaranth flour: It is a highly nutritious grain with high protein and is naturally gluten-free. While it has some similarities to quinoa it has its own benefits.
Almond meal: Almond flour is rich in monounsaturated fat, which can help keep cholesterol under control.
Variations
You can make it whole amaranth flour or use a combination of whole wheat flour. Use any kind of herb like rosemary, cilantro. I have used garlic powder, you can use fresh garlic too.
Can I make it sweet?
If you like try a tablespoon of sugar. I have never tried as a cookie. The proportions will vary if you are adding more sugar.
What can I add in crackers?
You can use sesame seeds. Don’t be afraid to make substitutions if the item is not available. Try nutmeg, cinnamon, cardamom, and ginger powder.
Consistency of the flour
Since amaranth flour is gluten-free, it feels like the dough is too dry. But when you press through your hands you will get the dough consistency. If too dry add 1 more tablespoon of water or if the dough is sticky add amaranth flour.
Making crackers
Lie a parchment paper and place the dough on it. Flatten it and add one more parchment paper on top. Use a rolling pin to flatten the dough evenly. Prick holes on the dough. This process helps the crackers to stay flat and not doomed. Then use a cookie cutter to shape it and bake.

Amaranth almond crackers
Ingredients
- 1/2 cup amaranth flour
- 1/2 cup almond meal
- 1/2 tsp baking powder
- 1 tsp garlic powder
- 1 tbsp chia seeds
- 2 tbsp chopped parsley
- 1/2 tsp salt
- 2 tbsp oil
- 3 tbsp water
Instructions
- Preheat the oven to 350°F. Line up the cookie tray with a silcone mat or parchement paper.
- In a bowl combine amaranth flour, almond meal, garlic powder, baking powder, chia seeds, chopped parsley. Mix well.
- Gradually add oil and water and knead to form a smooth dough.
- Flatten the dough with the rolling pin to 3 inch thickness. Keep the dough in between the pachament papers so that it doesn't stick. Prick hole using fork.
- Use a cookie cutter to shape the crackers and bake for 12 minutes or bake until lightly browned.
- Once cooled it will turn crispy.
